Ingredients
500 gm boneless chicken cut to strips
6-8 green chillies
1 cup fresh basil
3 large onions sliced
4 tbsp oil
4 tsp fish sauce
2 tbsp dark soya sauce
2 tbsp green curry paste
( Corriander leaves, green chillies,ginger,lemon grass,lemonrind,curry leaves ground together)
20 cloves garlic
1 tsp sugar
Salt to taste
METHOD
Marinate the chicken in fish sauce, soya sauce and green curry paste. Set aside. Halve the garlic cloves lengthwise.
Heat oil in a wok. Add sliced onions and saute. Diagonally slice chillies, add to onions.
Add the garlic. Saute till light golden. Add the marinated chicken and fry well. Adjust salt and add sugar. Mix well. Toss with basil leaves. Do not cover.
Cook till the chicken is tender.
Serve with steamed rice or fried rice.
