Everyone loves dal gosht.. especially on a Friday. This is my way of making this wholesome dish very easily.
INGREDIENTS
750 gms mutton on the bone
1 cup arhar dal
1 cup channa dal
1/2 cup masoor dal
2 onions sliced
2 tomatoes chopped
2 tbsp ginger garlic paste
2 tsp kasuri methi
1 tbsp cumin seeds
Curry leaves
2 tbsp corriander and cumin seeds powder
3 tsp red chilli powder
1 tsp turmeric powder
2 tsp garamasala powder
Salt to taste
5 tbsp oil
3 tbsp ghee
3 tsp chopped garlic
Chopped corriander leaves
Grind to coarse paste..
4 tbsp corriander leaves
12 cloves garlic
4 green chillies
2 tsp cumin seeds
METHOD
Wash the mutton and marinate with ginger garlic paste and salt.
Wash all the dals and soak them for at least 1 hour
In a large pressure cooker heat oil, splutter cummin seeds curry leaves and add sliced onions.
Fry till pink. Tip in the mutton and saute well. Now add the ground green paste and all the powdered spices and 1 tsp of garam masala powder. Saute well with a little water. When all this turns aromatic, add the chopped tomatoes. Finally add in all the soaked dals. Add salt.
Pour enough water that all the mutton and dals are immersed.
Cover and pressure cook till the mutton is just done. Soft but firm on the bone.
When the pressure settles down..in another small vessel heat ghee, add the chopped garlic to it... sprinkle the remaining garam masala powder, chopped corriander leaves and kasuri methi over the dal pour the smoking hot ghee over these. Cover and simmer the dal till everyone knows that something very tasty is ready in the kitchen.( Till the aroma spreads )
Serve with steamed rice and tandoori rotis.
Please note...you can also add dudhi to this dal. Peel the dudhi and cut it to chunks. Apply 1 tsp salt to it. Heat very little oil in a pan and cook these dudhi chunks till soft. Add this to your dal at the end...just before the tadka.
