INGREDIENTS:
- 500gm boneless chicken cut to strips
- 1 cup chicken stock
- 3-4 tbsp sesame oil(til oil)
- 2 cups boiled noodles
- grind to paste 1inch piece ginger,8 cloves of garlic,2 small onions,2 tbsp lemon grass,2-3 red chillies
- 2 tbsp curry powder
- 3 cups of coconut milk
- 2 tbsp lemon juice
- 1 small bunch of spring onions chopped
- 1 small bunch of coriander chopped
- 10-12 cloves of garlic thinly sliced and fried golden brown
- 2 medium onions thinly sliced and fried brown
- 3-4 tbsp of salted peanuts
- 2-3 green chillies finely chopped
METHOD:
Heat sesame oil in a non stick pan fry the chicken pieces till light golden brown and keep aside, in the same oil fry the paste, add curry powder, salt, add chicken stock bring to a boil, add coconut milk,lemon jiuce and simmer for 2-3 minutes.
For serving place noodles in a bowl spread chicken, spring onions, browned garlic, browned onions, spring onions and top with the curry. Garnish with salted peanuts and chopped coriander.
NOTE:
serving portion is according to individuals.
If you find curry is not thick enough dissolve 1tbsp corn starch in little water and add to the curry before adding the coconut milk.
